INGREDIENTS

1 ripe avocado

½ cup sautéed mushrooms (button or cremini), cooled

1 tbsp pumpkin seeds

1 tbsp sunflower seeds

1 tsp sesame seeds

1 tsp chia or flax seeds

A squeeze of lemon juice

Salt and black pepper, to taste

Optional: drizzle of olive oil or a pinch of chili flakes

Method

Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl (or serve in the halves for a rustic look).
